Chinese Chicken Salad



My family LOVES salads. We have salad with dinner or even as a main entrée at least a couple times a week. I am always creating and tweaking salad recipes to keep some diversity at dinnertime. This Chinese Chicken Salad recipe is a favorite at my house and probably one of my most requested recipes by friends, family and co-workers. It’s easy to make and it makes A TON so it’s great to feed the fam a big bowl of it for dinner, to serve as a side dish when you have company or to take to a potluck. I use grocery store rotisserie chicken and usually prepare my ingredients ahead of time to make it even easier on myself. That way all you have to do is toss in the noodle mixture and dressing and serve!

Dressing
1 cup white vinegar
1 cup vegetable or canola oil
1 ¼ cup sugar
¾ cup soy sauce
4 cloves fresh minced garlic
½ tsp. ground ginger
-Whisk all ingredients together in a bowl until sugar is dissolved. Cover and refrigerate.

Salad
1 head green cabbage
1 head Napa cabbage
1 bunch green onions
1 whole cooked rotisserie chicken
3 packages of Ramen noodles (discard seasoning)
1 2/3 cup sliced almonds
3 Tbsp. butter
- Crush 3 packages of Ramen noodles and put in pan with almonds and butter. Toast until golden brown. Set aside.
- Coarsely chop cabbages, slice green onions and remove all chicken meat from bones. Discard skin and shred meat.
- Combine cabbage green onions and chicken with toasted noodle mixture in large bowl. Whisk dressing again then toss into salad just before serving and enjoy!
