Taco Lasagna

This taco lasagna is SO easy and that's my favorite kind of dinner. My kids love it too so that's an added bonus. Since football season now has officially begun (sigh) this is a great dish to bring to those football parties.

1 pound ground beef
1/2 cup green bell pepper
1/2 cup chopped onion
2/3 cups water
1 envelope of taco seasoning
1 can black beans, drained
1 can of refried beans
1 can of Rotel diced tomatoes and green chilies, drained (I get mild so my kids will eat it but I would prefer to get the hot!)
6 flour tortillas
3 cups of shredded Mexican cheese blend

In a large skillet cook the beef, bell pepper, and onion until no longer pink, drain. Add the water and taco seasoning, bring to a boil. Simmer uncovered for about 2 minutes. Stir in the black beans, refried beans, and tomatoes. Simmer uncovered for about 10 minutes or until boiling.

Place two tortillas in a greased 13 x 9 baking dish. Spread half the bean and meat mixture and 1 cup of cheese. Repeat layers. Top with remaining tortillas and cheese. Cover and bake at 350 for 25-30 minutes or until heated through and cheese is melted. Top with salsa and sour cream.

*We have more yummy "football" recipes to come, so stay tuned*
