My friend Jessica told me about these cookies last fall and I probably ended up making them about 6 or 7 times throughout fall and winter. They are moist and oh so yummy! Even after a week of sitting in a covered container they were still as moist as when I first made them.
These are the ingredients. That's it! No eggs, oil, nothing.
Pumpkin Chocolate Chip Cookies
1 box of spice cake mix
15 oz can pumpkin
1/2 bag of chocolate chips
Mix together all ingredients. Bake at 350 for about 12-15 minutes for medium sized cookies and 15-20 minutes for large cookies. Remember they are made with cake so they are going to be fluffy and probably look raw. If you are not sure just break one in half and check the middle.
